The course introduces the student to the science of nutrition and its relationship to health and disease. Topics include the major nutrients and their function in the body to include carbohydrates, protein, lipid, vitamins, minerals, and water. Lessons apply the role of food and nutrients in energy balance and weight control across the life cycle, in health maintenance, and disease prevention.
